Yusho with Chef Mathias Merges
Just for Sake of It: A Tasting Exploration
Tuesday, October 29, 2013 at 7:00PM

Yusho
2853 N Kedzie Avenue

Logan Square

Yusho has never shied away from crossing into uncharted territory. From its location to its yakitori-inspired menu of big, brazen flavors, chef Matthias Merges is blazing trails for the adventurous—and the merely curious—to happily follow. While it may appear to be a modern, action-packed dining experience worthy of anime, at its core is a profound respect for the traditions and techniques of an ancient cuisine. If Yusho was designed to dislodge outdated ideas about Japanese food, it’s greatest success is not in replacing those ideas, but enriching them with an entirely new perspective.

With the same intensity of purpose, Yusho’s entry in the Condé Nast Traveler’s Global Tasting Tour will open your senses to the full spectrum of modern sake. The night is inspired by the belief that the best way to learn about sake is to enjoy it artfully paired with food. Imagine Kalbi Beef Short Ribs paired with full-bodied Mizbasho Ginjo or duck breast paired with a mellow Kimoto Junmai. Don’t know your Ginjo from your Junmai? No worries. At this first-of-its-kind Yusho experience, General Manager and Certified Sake Professional, Timothy Koenig, will guide you course-by-course to a comprehensive understanding of Japan’s national beverage. Meanwhile aficionados will have the chance to discover the work of young brewers working in entirely new styles—including some sakes not available elsewhere or only recently imported. Journey to the bold side of sake and leave with a deeper appreciation of Japanese cuisine—and a gift from the chef.
