Located in Chicago’s historic meatpacking district, Publican Quality Meats is the sister restaurant to ever-popular Publican. By day an artisanal butcher shop and café, by night it becomes the charmed setting for exclusive dining experiences. The approach here follows the same ethos long espoused by the James Beard Award-winning executive chef, Paul Kahan: unadorned and straightforward preparations of pristine seasonal ingredients, hand selected from local purveyors.

In a one-time-only event for Condé Nast Traveler’s Global Tasting Tour, Publican Quality Meats will return to Publican’s American roots and celebrate the restaurant’s founding trifecta of oysters, pork, and beer. The evening starts with a welcome cocktail followed by an oyster shucking demonstration and a guided tasting of East and West Coast oysters. Then you’ll be off on a tour of American flavors by way of the restaurant’s most famed dishes, such as the Little Gem salad—complete with crispy fried pigs ears—hot charcuterie, grilled country ribs, ham chop in hay, farm chicken, and glazed pork belly. The feast ends with a seasonal dessert created just for the night by the award-winning pastry chef, Anna Shovers. Every course comes with beer pairings hand selected by beer director, Michael McAvena—including an autumnal pumpkin ale or two. The culinary journey will be narrated by the chef, featuring personal insights on techniques, ingredients, and the history of restaurant’s historic meatpacking location. Your evening will end with a parting gift chosen from Publican Quality Meats’ meticulously curated selection of artisanal pantry staples. In one unforgettable night, you’ll re-discover America and savor its best ingredients from land and sea.
